The Sundance Resort: The Foundry Grill, The Treeroom and Sundance Farms

A long weekend spent with film and great food.

We were forewarned of the lack of great dining while attending the Sundance Film Festival, but our experience at the Sundance Resort proved them all wrong. Once we arrived and were introduced to the "water specialist" who did indeed know all there was to know about water, we knew we were in good hands.

Breakfast at The Foundary
A skiers breakfast fit for any serious film maker. On most mornings there was a full buffet. The eggs were creamy and light, the sausages spicy and the coffee strong. But most memorable of all were the buttermilk biscuits served hot with fresh jam. Hearty and cake-like, served with a gravy option, they held up just fine and one only wished that breakfast was all day long.

Pork Chops Stuffed with Apples and Macaroni and Cheese
All of the meat dishes at The Foundary are grilled over a wood burning grill and the pork chops were tender and seasoned perfectly. Lightly filled with apple stuffing, they were big, thick and delicious enough to eat off the bone. The macaroni and cheese was hearty and made a perfect accompaniment to this down-home country meal.

The Treeroom Restaurant
The Treeroom is the more elegant of the two restaurants on the resort. The decor is aligned with Western Art from Robert Redfords personal collection and favorite stills from "Butch Cassidy and the Sundance Kid" align the walls. In general it is a cozy, intimate dining environment, with its namesake from a tree growing in the center of the room. The food is very good, but there was something missed from the friendly and warmer service at The Foundary.

The Sundance Farms
Located about 20 miles outside the resort, the Sundance Farms is absolutely worth the visit. All herbs and vegetables served at both restaurants are grown organically at the farm. There is also a magnificent herb-drying barn for the herbs before they are shipped off to the various retailers. The horses grazing in the pasture with the mountains in the background is a sight to be cherished for a long time to come.
